Hot Bacon Dressing
Ingredients
Hot Bacon Dressing:
- 8 slices of bacon
- 1 small shallot, finely chopped
- 2 tbsp Australian Vinegar Co. Apple Cider Vinegar
- 2 tsp maple syrup
- 1 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp black pepper
Method
1. Cook the bacon
Cook the bacon in a frying pan over medium heat for 8–10 minutes, or until crisp. Transfer to a plate and set aside, reserving the rendered bacon fat.
2. Cook the shallot
Add ¼ cup of the rendered bacon fat to a small saucepan with the chopped shallot. Cook over medium heat for 2–3 minutes, or until softened.
3. Add the dressing ingredients
Reduce the heat to low and stir in the Australian Vinegar Co. Apple Cider Vinegar, maple syrup, Dijon mustard, salt and pepper until well combined.
4. Add the bacon
Chop the cooked bacon and stir it into the saucepan. Simmer for 1–2 minutes, or until the dressing has thickened slightly.
5. Finish and serve
Remove from the heat and serve the bacon dressing warm over your favourite salad.
